Exotic Fruit Salad

  

This can be made a day ahead. Time required: 20 minutes 340 g. granulated sugar 280 ml. Water 2 sprigs of mint leaves 6 cardamoms crushed 4 passion fruits, halved  with flesh scooped out 2tbsp. (30ml.) Orange liqueur 24 strawberries cleaned and halved 1 large ripe mango, sliced 4 small bananas sliced 8 leeches as, peeled

   

Preparation   

Heat the sugar and water in a saucepan. Simmer until clear. Bring to the boil and simmer one minute.

  

Remove from heat and while still hot, divide the syrup between four small serving bowls. Add mint to one bowl and cardamom to the second bowl. Allow the other two bowls of syrup to cool before adding passion fruit pulp to one and orange liqueur to the other. Add strawberries to mint syrup, mango to cardamom syrup, bananas to passion fruit syrup and leeches to the orange syrup.  

Serve fruits in individual dishes, with the coconut ice.
